March Madness or is it March Badness ?!?

My bracket this year is not good.  I have $10 riding on it....  we shall see.  Here is my bracket if you want to compare!

Spring Break

This week was Spring Break.  It was so nice to be able to relax; however it went by really fast.  On Friday after school we went up to Dallas for the weekend.  On Saturday my best friend from high school, Katie, had a wedding shower.  And that night we had a bachelorette party for her.  It was great to hang out with her and see some people from high school that I hadn't seen since high school.  We started off by having a lingerie party for her at the Magnolia Hotel downtown, went to dinner, and then went out on the town. 
We spent the night at the hotel, and after an hour (yes I said an hour) wait for my car from valet, I met mom, dad, Leslie, and Russell (who mom and dad entertained for the weekend with golf and wii) for lunch at Red Lobster on Sunday. 

 On Monday Russell was "sick" and we got to hang out all Monday, since I really hadn't seen him all weekend.  We were going to go play golf, but it rained- a lot.  On Tuesday I cleaned the house and later that night Lauren came into town.  It was great to see her, I hadn't seen her since Christmas.  On Wednesday we went to the outlet mall.  I hadn't been shopping in awhile, so it was nice to get some things.  Later that night when Russell got home we went to the driving range.  I don't think Lauren liked it.  For one thing, she is left handed and we do not have left handed clubs.  I got a set of clubs, apparently Jeremy had bought them for Leslie, but they were too short, so they gave them to mom, which they were too short for her as well.  Yes, they fit me just fine.  lol.  On Thursday Lauren left, and Leslie came down.  We had lunch at On The Border (of course), and then we went over to Brad and Haley's (her old roommate) to hang out with them.  Leslie left that night, short trip-I know- she is crazy.  Friday I actually did the work that I had been putting off for over two weeks.  I graded some essays, and finished up on Saturday. 

Spring Break was great, but now I'm ready for summer.  Nine more weeks!

Billy Elliot

I feel like I'm always a week behind on this thing.  Sorry.  I'm trying.

Last Sunday I had the opportunity to go see Billy Elliot the musical at the Hobby Center in downtown Houston.  Kathy (Russell's mom) was going with the Camp Periwinkle girls, and they had some extra tickets.  The same couple that buys tickets to the Texans game for the boys, bought these tickets for the girls. 

The show was really nice.  It's a musical about a boy who gets into the Royal Ballet School in London.  They kept calling it bally.  Cute.  They had several little kids who were very talented.  Unfortunately there weren't really any songs that stick in your head days later.  But it was all very good.  I think Elton John wrote all the music.  It has won several Tony's. 

Afterwards we went to Carrabas for dinner.  They had appitizers ready for us when we got there.  Which was great because it was a long time since we had eaten, because it was a one o'clock show.  We were able to choose any entree and drink, and even had a dessert platter to share.  It's was great, I was definitely full afterwards.

It was an all day event, and it made me not do all my grading.  But it was worth it. I am thankful to know such great people who want to help out kids with cancer.  And thankful that they include me in things.

Happy Belated Birthday

I meant to post this about two weeks ago, when it was actually my birthday, but life has gotten busy since then.  I turned 25 on February 13.  I am now officially in my mid twenties.

My parents came in for my birthday weekend.  On that Saturday, Russell had to go into work, but me mom and dad hung out and played some wii.  Then when Russell came back we went to the driving range.  And that confirmed that I am still no good at golf. lol.  But mom, dad, and Russell have all had lessons and did well.  Later that night we went Cheesecake Factory and met Russell's parents there and my friend Amanda.  It was lots of fun to hang out with all of my friends and family... plus I love Cheesecake Factory!





On my actualy birthday, on Sunday, it was a little less exciting.  After mom and dad left it was a normal Sunday with me grading papers, doing laundry, and going grocery store.  Thanks to everyone who told me happy birthday, and sent me cards.  I am very blessed :)

Power On Power Off

So today started out crazy...

For the second day in a row the power went out while I was getting ready.  Unlike yesterday when it came back on it about 2 minutes, it stayed off for the rest of the time I was getting ready.  Good thing I had already straightened my hair, and had just put the finishing touches on my make up.  So I continue in the dark with my flashlight, and make my lunch.  Then I wait a few minutes to see if it was going to come back on so I could get out of the garage. 

The reason this would be a problem was because I had accidentally left my phone in my desk at school, and we don't have a house phone.

So I finally realize the power is not going to come back on.  So I go out to the garage and try to open the door manually.  I unlocked it and pulled.... and pulled.  So I thought maybe I turned the lock the wrong way, and I pulled... and pulled.  Nothing was working.  So I decide maybe it's easier from the outside.  So I go through the front door and try using my house key to open it...yeah it didn't even fit in the hole.

At this point I am gettin gvery frustrated.  Nothing is working.  I have no phone, and it's getting closer and closer to time to get to work.  How do I even call to say I'm running late?  I am debating on if I should ring a neighbors doorbell to either ask for help or borrow their phone.

I go back inside and try one more time inside.  I remember Russell showed me once how to do it (but obviously I'm forgetting).  Then I remember he did something up high.  So I look up and see the red cord staring at me in the face.  However, so some of it is cut off so I can't read the directions.  But I pull it anyway.  And lo and behold that was my key to freedom.

On my way to work everything is dark, no lights, not even flashing.  The school is on generators.  But by 1st period they had us back on power.  But apparently Texas has decided to do rolling blackouts.  We had it go out for at least 4 times.  Which always makes for an interesting day.  They have one light in every classroom on generator, so you can still work.  But it's hard to convience kids that you can work. lol.  When it happened in 1st period, I finished up what I was talking about, and we had about 5 minutes left, and they came around a said that we would stay in 1st for awhile.  So we played Heads Up Seven Up (well technically three up, because that class is small) and hangman.  It was fun, they are a good class.

In every other class period we were able to do the work, but the kids did not want to.  I'm not going to lie I didn't really want to either, but the show must go on.  Luckily, the cafeteria was able to get enough power to make the lunches.  If they still plan on doing the rolling outages tomorrow, more than likely we wont have school, but who knows.

Cold Nights

So lately it's been pretty chilly.  And of course since it's Texas it comes and goes.  I'm not one to usually put recipies on my blog but this one I need to share.  I found the recipie for the chicken enchillada soup from Chili's.  And it's almost exactly as good as it is at the resturant.  Here's what you need:

1 lb chicken breast, cubbed
1/2 hald an onion, diced
2-3 cloves of garlic, chopped
4 cups chicken broth
1 cup masa harina  (this is a Mexican tortilla flour- yes you can find it at walmart- with the hispanic foods, or in the baking aisle as well- normally somehwere on the bottom shelf)  this is what makes the soup nice and creamy!!
3 cups water
2 can enchilada sauce (I like the hot kind)
16 ounces Velveeta cheese, cubed (it's about half a block)
1 teaspoon salt
2 teaspoon chili powder
1 teaspoon cumin


Here's how to make it:

- In your soup pot (the big one because you are going to want to make a lot) add your cubed chicken breast and cook until white on all sides.  Set aside the chicken on a separate plate until later.
- Add the garlic and onion and saute over medion heat until slightly translucent.
- Add the chicken broth and bring to boil
- Combine the masa harina with 2 cups of water in a medioum bowl (or your big measuring cup) and whisk until blended.  Add to boiling chicken broth.
- Add the last cup of water, enchilada sauce, and spices to the pot
- Add the Velveeta cheese to the pot carefully, in small batches so it will melt in
- Add the chicken back into the pot
- Reduce the heat and simmer soup for about 20 or so minutes

Ladle up a big bowl of this soup.  I like to add some shredded cheese on top, with some crushed up chips, and a dollup of sour cream!

I go ahead and put the left overs into small indiviual tupperware containers so I can grab and go for lunches that week. 

Go ahead and try it- it will change your life.... ok maybe not, but we have already made it three times this winter!!

2011 thus far

So far things in 2011 have been kind of boring.  Back to work.  However, a few things are exciting to but probably not to anyone else.  Some of my students got schedule changes for this semester, and a few of my trouble makers got put into other teacher’s classes, and a few of those who are struggling got put into some of my smaller classes.  This has been a blessing, and I think the kids can are liking it as well.  Crazy how one kid can make or break an entire class. 

Yesterday we finally took down our Christmas decorations.  We stopped having the outside ones turn on, but two weeks into January it was time to take them down and into the attic.  However, now the inside of the house looks plain and boring again.  Where we have the tree now looks like a huge gaping white hole…. now taking suggestions of what I should put there.

Russell’s parent came over on Friday to watch the Cotton bowl.  Unfortunately the Aggies couldn’t pull it out.  Our track record in bowl games over the last few years is not good.  Maybe next year! 

Speaking of football, the Stace-a-nators, my fantasy team also couldn’t pull it out.  I started off real strong, going 6-0 and then a I lost to Russell by just a few points, and then again to Leslie later in the season.  I ended the regular season in 3rd (technically should have been 2nd, but the top two teams were first in their divisions).  However, in the playoffs my team just went down hill.  I think I ended the season in 6th.  Not too bad for my first time.  I’m excited about next year, I have two players that I really want on my team again, and I already have an awesome new team name planned…but you will have to wait until August to find that out!

So far I have been sticking to my New Year’s resolutions.  I have been to the gym a lot, adding more vegetables to my diet,  and reading more (thanks to my Kindle it’s been easy!).   Now I just need to find a good music store around here so I can get some more sheet music so I can start playing the piano again!  If you know any good places in Houston let me know!
